Decided to give Crossover another shot in hopes it figured out how to get Icewind Dale II to run on Apple Silicon Macs. Sadly, full screen is still greyed out. In other words, the game runs just fine in windowed mode, but full screen is not an option. Does anyone know why? Are there other games that have this problem?

The issue is likely with your display. Modern Mac displays dropped support for some small fullscreen resolutions, which prevents games that default to those resolutions from running in fullscreen. Right now, the only workaround are playing in windowed mode or using an external display.

Go to the Mac App Store and get the free app EasyRes:
https://apps.apple.com/us/app/easyres/id688211836?mt=12
It will allow you to set your display to resolutions you cannot set using System Settings. Use EasyRes to set your display to something very turn of the century such as 800x600 or 640x480 before launching your game. This does not always work, but often does.
