Seeing as most emulators allow individual settings per game, I think CrossOver should support this too, because seem games just won't work with the defaults and it would make it simpler to manage. Please implement!

What do you mean?
There are specific settings for every bottle and (if possible) there should be one game in one bottle.
Everything else is really hard, as Crossover and the base "wine is not an emulator" (=wine).
Before advising on a bottle per game check out this post. There's a good explanation of this concept good and bad. But the info is in the middle by Hmung I'm spelling the user's name if not I apologize in advance. He spells it all out.
Please remember that Wine is NOT an emulator :) Just as Dura stated.
