I was wondering if anyone knew how to manually inject the latest build of Wine into Crossover? For example, if I wanted to use version 1.1.29 that was just released today with Crossover.

With a lot of hacking you can, but you really don't want to, especially if you're on a mac. CrossOver's wine has a number of hacks in it that make games work better, or work around graphics driver bugs. Wine doesn't have them because it has a no-hacks policy. If you upgrade the Wine inside CrossOver, you loose the driver bug workarounds and many games will likely break ☹️
As far as I'm aware that's not possible, as it's a pretty custom WINE being used.
