What backend is used if DXVK is turned off? Easy way to enable info overlay for each backend?

I see moltenvk, vkd3d and dxvk in the sources dir. Which is used when DXVK is disabled?

Is there an easy way to enable some sort of dashboard for each backend so I can tell which is being used?

Wine's own wined3d is the default for everything but DirectX 12 games. vkd3d is the default for DirectX 12 games. DXVK is another option for running DirectX 10 and 11 games. MoltenVK is used to provide Vulkan capabilities for DirectX 10, 11 and 12 games.
