The creation of Win32 and Temp folders gets me on edge. Also, can install any Win32 .exe file, or am I limited by the parameters set by CodeWeavers?

About installing stuff, no...you are not limited by crossover's
inbuilt support targets -- you can try install any .exe you desire,
but of course not all windows software works...yet...
