Is there anyway in Crossover to disable the registry editor or locking specific key values from being edited?
All windows solutions I've looked at are incompatible in my wine bottle :(

none that I'm aware of. If a registry setting is modified in an undesired manner by a program's installer, you should be able to manually switch it back after installation. If this is a registry key that's set each time the program launches, then Crossover is behaving as intended by allowing the program to modify the registry as it sees fit.
