I just update Crossover up to 12.1.0.
After that, I can not install any new software.
It will be not responding, after I click any software at "Select any application to install". (even I create a new bottle first)
I don't think you did anything wrong - there's probably just a stuck process from the upgrade gumming things up. I'd completely close Crossover, and then open up your Activity Monitor and look for any remaining "Crossover", "wineloader", or "wineserver" processes, and Kill those processes if you find them. ("CrossoverCD Helper" is ok, you can leave that alone).
Afterwards, launch Crossover, again, and head to the install software menu. Are the selections still unresponsive?
