My boot drive is rather small so it would be great to store all my bottles on an external one. I tried symlinking bottle directories to ~/Library/Application Support/CrossOver/Bottles
but CrossOver did not recognize them.

Symlinking the default bottle directory to an external drive works for me, here's what I did.
Move the Bottles directory across to the external drive, then run the below:
ln -s /Volumes/Samsung_T5/Bottles "/Users/<myusername>/Library/Application Support/Crossover/Bottles"
My external drive volume name is Samsung_T5, and obviously replace the myusername.
