Maybe that’s an edge case where Apple supports this directly within macOS Big Sur now, as overall I’ve required 11.2 for some applications & games to even function.
You could use regedit and force wines HID detection to disabled, this was another requirement for me to workaround the controller issues on my M1 Mac Mini.
