I bought and downloaded Fallout 1 from GOG to try this out and can confirm that it will crash when the video is supposed to start. The launcher itself has another issue with the network name apparently not found (not sure, why this would affect anything, but, oh well). I could get Fallout to run under Parallels, when directly launching the app, not using the shortcuts (which would crash the game).
No luck under CrossOver. It's most likely due to some BINK video that make the game crash. Not sure how to get around this. I'll experiment with this a bit further, but don't get your hopes up too much.
If I’m remembering correctly Fallout and Fallout2 are both 16Bit.
Wine32on64 doesn’t support 16Bit Windows binaries.

I'm not sure if this is completely correct, as I've got Fallout to work under Windows 11(!) in Parallels. I'm not sure if Win11 still supports 16 Bit binaries.
Edit: In addition to running this in the ARM version of Win 11 on my MB Air M1.

Yes, windows still support.
I will play fallout 1 in windows.
