The user noted that he unzipped the .ZIP file with an archiving tool app and not directly in Apple Finder.
I had the same issue when I unzipped the file the first time using the built-in extractor tool in Double Commander.
To fix this problem, delete the old installation and the old extracted .app file. Go into the download folder in Finder where the .zip file lives, and extract the zip file contents just by double clicking on it in Finder. Then drag the CrossOver.app file into the Finder "Applications". Next time I loaded CrossOver, it could create bottles without any problems.
For whatever reason, using an archiver other than the standard one in Finder causes the symlink problem the user noted in the other forum post.
Use Finder to extract the .zip and then drag to Applications, and all is well.
Third-party GUI archive utility’s by default add the quarantine flag to any extracted archives reclusively.
Most archive utility’s should support symlinks within archives if using libarchive but who knows what backend there using for this.
Apple has there own customizations to there .zip format possibly also complicating matters.
