I know Ubuntu and PopOS! are known to be good (or the best) for gaming. But has anyone had success stories with certain distros over others with CrossOver?

I've used Crossover since Mepis days. I run KDE Neon atm and it runs just fine. I have used on Deepin 20.9 and Kubuntu without any issues.
I use Kubuntu since decades ago... The *buntu is the easiest to find solutions to problems in the web, not only with Crossover or Wine, but anything... And KDE is my favorite, a bit heavy for old computers, but does everything I want.
That said, any distro will work as well, as long as you know it deeply... I confess nowadays I prefer to google and promptly find step-by-step how-tos...

I use Mint (Mate) without any other issues than teh ones common with CO

I'm using Crostini, which is based off of Debian. I'd think that any Debian or RHEL-based system (that is, those that use DPKG/APT or YUM/Zypper) are probaly the best, just given our experiences. I also ran Bottles (the independent app) on an aged iMac that just recently died, so that's also that.
I use Mageia and been using Crossover on it since Mandriva, Mageia is the best Mandriva Fork there is, I also use it for gaming and it runs great!
I have tried Crossover on Ubuntu, Kubuntu (KDE), and Lubuntu, currently running CrossOver on the last 2 mentioned, and it works!!
I run OpenSUSE so it sounds like it runs best on the distro with which you are the most comfortable.
I use Ubuntu based Linux (Mint, Zorin and Tuxedo) and Crossover works well
