i have almost no storage and it's very weird how it seems to be such a buried thing to try and transfer a game, so does anyone know how to transfer or download (hopefully transfer) a game from the system SSD to and external SSD?

FWIW I run my bottles on an external SSD from my M1 with no issues. Hope you got it sorted.
In addition to transferring the storage of CrossOver the games/application locations will be in /Users/(username)/Library/Application Support/CrossOver Games/Bottles/(bottle name)/drive_c
Can't see it being mentioned but don't forget to choose your external drive as game library in Steam app. Then all your games will be installed on the extrenal drive in the future.
