how to block new steam updates at launch?

Sorry if this issue has been previously addressed on this forum and I'm missing something obvious, but the latest steam update breaks steamwebhelper on the newest version of Crossover my computer can run (23.7.1). Can I block this update and still launch steam on Crossover 23.7.1?
