CrossOver (and Wine) on Mac uses the X11 display system, the same as most other Unix and variants do, such as Linux. However as of Leopard, it is still under heavy development, and the versions shipping with Tiger and Leopard are known to be buggy. Apple hired an engineer from the XQuartz project to work on it, and as of Leopard they use the XQuartz version as the basis of their official included versions.
