Here are the steps to fix the annoying periodic bursting noise problem in the main menu screen. This has been tested with the GOG.com version only, but the original retail version very probably exhibits the same problem.
You'll need the DLL file C:\windows\system32\dsound.dll from an existing Windows XP installation (or you can just grab it from the internet and experiment with that – not recommended).
Select the Configure > Manage Bottles... menu item
Select the bottle where Syberia II is installed
Under the Advanced tab, select Open C: Drive in Finder
Copy the original dsound.dll into windows/system32, overwriting the existing placeholder file
Now back to the bottle manager... Select Control Panel
Launch Wine Configuration
Select the Libraries tab
Type dsound in the New override for library edit field, click the Add button, click the Edit button, select Native (Windows), click OK, and click OK
