In case the other tip doesn't work for you in getting the game to run, you can try this.
Launching the game from Steam loads the EA launcher, which crashes. You can launch the game directly from its .exe file. In CrossOver, click "Open C: Drive". The path within is
Program Files (x86)/Steam/steamapps/common/Jedi Fallen Order/SwGame/Binaries/Win64/SwGame-Win64-Shipping.exe
Note that EA Launcher will still load and crash with an error, but the game will run.
You can also create a shortcut using the "Run Command" feature of CrossOver.
When laughing in this way, with Steam open, Steam does NOT see that the game is running. So Steam Achievements and other features will not work.
