Despite the fact that there is a default virtual desktop size set, the game will default to starting in 640x480. To remedy that, select the bottle where the game is installed. Press the Run Command button, navigate to where the game is installed (usually in C:\GOG Games\Sin Gold ) and select the file named nglide_config.exe.
Select a proper resolution from the dropdown menu. You may also want to adjust the aspect ratio. If you don't want the image to be stretched you can select the 4:3 option. The downside of this is that you get black bars on the sides. You may want this though, in case the FOV (which can't be adjusted) creates issues for you.
