I've noticed it's a little different with newer versions of crossover games - if you tried the steps above and it didn't work, try this:
After the installation, run the wine config tool in the bottle manager and be sure to tick the "Emulate a Virtual Desktop" button in the "Graphics" tab and set the resolution to the game's default (640x480). You can then start the game, change the in-game resolution to the desired resolution, exit, change the emulated desktop resolution to the desired resolution and restart the game.
