You can change the themes in Office 2007 by going to the office button then clicking "[application] Options" (where [application] is the program currently open) at the bottom. After the options window opens click the "Color Scheme" option and chose from:
Blue
Silver
Black
Then press "O.K." and the new theme will be applied.
