GTA V will run on Crossover 22, with some tweaks and fixes. (This was tested using an M1 Max 24c GPU Mac Studio)

Installation -
Make sure you disable / turn off any VPN or antivirus before installing.
After installing the game via Steam, Rockstar Social Club launcher issues were encountered. This was fixed by:
Initially let Steam and Rockstar Social Club perform any pre-requisite installations necessary. Upon launch of Rockstar Social Club you will be greeted by an error message. Simply 'Quit' the bottle in Crossover ('Force Quit' if necessary).
Launch Rockstar Social Club directly via Crossover, you will be prompted to allow access to files / other security items, allow all of these.
Launch Steam via Crossover directly, allow any file access or security protocols it requires (they will pop up automatically on screen).
Quit the bottle again (force quit if needed).
Launch Steam, and launch GTA V - now proceed to next step.
Black Screen - Upon launching GTA V, you will occasionally see a black screen, but still hear audio. To resolve this, simply Opt+TAB out of the game, and then click the game icon on your macOS dock, the game should no longer have a black screen now.
IF using Bluetooth headphones - Upon launching GTA V the app will assign microphone permission to your bluetooth headset, this will significantly degrade the audio quality by adjusting the codec used (you will notice higher audio quality at the very start of the app, and then it will change).
To fix this, after starting the game, at the main menu, choose 'Settings' and then choose 'Voice Chat'. Funnily enough, the voice chat will already be disabled, but accessing this menu forces the game to recognize that you don't want to use the microphone (instead preferring higher audio fidelity) and you should notice the adjustment almost instantly. Exit the menu after saving your settings.
