So I've personally come across this issue (MBA M1 base running MacOS 12 Montery) that opening GTA V for the first time causes it to get stuck on the loading screen and it never progresses beyond that point. This issue seems to be not widespread but I've found out that opening Rockstar Games Launcher from the CrossOver bottle before launching GTA V fixes the problem and the game will boot right in the menu.
