Launch the game using C:\Program Files\Steam\SteamApps\common\chivalrymedievalwarfare\Binaries\Win32\UDK.exe instead of directly through Steam (create a shortcut)
Disabling "Allow the window manager to control the windows" or enabling "Emulate a virtual desktop" (with desired resolution) for UDK.exe within Wine Configuration will help if there are any complications when starting the game (if Steam Overlay causes problems it can be disabled)
Profit (mess with any in-game settings as you wish)
