I did some playing around with Carmageddon II, and eventually I managed to get it working using a patch I found on gamecopyworld which I think is a patch designed to make the game compatible with later versions of windows. It is called "Carmageddon 2 v2.0 [ENGLISH] WinXP Fixed EXE" On this website.
So,
step 1: Install from CD using Crossover Games (7.0.0 in my case)
step 2: install the patch
step 3: run the game
