To change the resolution of the game the EasyTutu Widescreen mod works very well. The relevant files can be downloaded at http://usoutpost31.com/easytutu/ as of April, 2012 (this may change, or it may not).
The executable installer is in my case after download and extraction found at ~/Library/Application Support/CrossOver/Bottles/Windows XP/drive_c/Program Files/BaldursGateTutu/setup-widescreen.exe, on Mac OS X 10.6. To run the executable I launch CrossOver, then click "Programs", "Run Command...", make sure the correct bottle is selected, then "Debug" and "Open Shell". This will open a terminal at the bottle "drive_c" with relevant paths and so on set.
cd Program\ Files/BaldursGateTutu/ wine setup-widescreen.exe
Follow the instructions and enter your desired resolution when prompted, e.g. 1440x900.
