Launching the Steam version (GOG and others similar) on Mac
[Note that this game also has a native Mac version.]
When launching the game from Steam, the Larian Loader asks you to install .NET core. If you click "yes", it downloads and installs to the same bottle (unless I did it wrong), then relaunches from Steam, and the same message comes up. If you click "no", the program quits.
You can bypass the loader and launch the game directly from its .exe file. In CrossOver, click "Open C: Drive". The path within is: Program Files (x86)/Steam/steamapps/common/Baldurs Gate 3/bin/bg3_dx11.exe
Again you are asked to install .NET core. Click "no". In any case, the game will continue to launch.
You can also create a shortcut using the "Run Command" feature of CrossOver.
Note: When launching in this way, with Steam open, Steam does NOT see that the game is running. So Steam Achievements and Co-Op will not work.
