Launching AC: Odyssey (Tested on M1 Max chip - Crossover 22.0.1)
As of Crossover 22.0.1 --
Create a new Windows 10 64-bit bottle. Ensure DXVK is disabled.
1a - UPlay - Install unlisted Ubisoft Connect Launcher into this bottle (Download here). Do not launch after install. Install CoreFonts via CrossTie into this bottle.
1b - Steam - Install Steam via CrossTie into this bottle.
2a- Uplay - Run the Ubisoft Connect Launcher and install Assassin's Creed Odyssey. Let Ubisoft installer install pre-req's.
2b- Steam - Run Steam and install Assassin's Creed Odyssey. Let Steam installer install pre-req's.
Force the game to launch in Windowed mode at first (prevents issues with computer locking up occasionally). 3a - Uplay - In macOS, open Finder. Navigate to your Documents folder. Find the "Assassin's Creed Odyssey" folder and open it. Right click "ACOdyssey.ini" and open with TextEdit. Find the lines that say "WindowedWidth" and "WindowedHeight". If these are set to "0" change the value to something smaller than your screen size (eg your screens resolution is 1920x1080, set "WindowedWidth = 1600" and "WindowedHeight = 900". Find the line that says "WindowMode" and change to "WindowMode = 0".
3b - Steam - In the Crossover bottle open Steam. In your Steam library list right-click Assassin's Creed Odyssey and choose "Properties". Under the "General" tab write "-windowed" in the launch options OR follow the steps in 3a.
Run AC Odyssey - note that upon launching the game there are graphical issues after "Press Any Button to Play" that cause severe lag during "Checking for Additional Content". Wait this out (it takes a long time) and you will eventually make it to the main menu, which crashes almost instantly.
