Steps to getting Anno 1701 (non-gold, non-expansion) running using Crossover Games 9.1.0 on Mac:
Install Anno 1701 in an XP bottle.
Go to Manage Bottles (under the Configure menu) and open winecfg under Control Panel after selecting the right bottle. Click the Libraries tab, then add dbghelp.dll as a new override. Afterwards, find dbghelp.dll in the list, click edit, then choose Native (Windows). Do the same for Anno1701.exe.
The Tages DRM in this program prevents it from running in CrossOver. If you are in a legal jurisdiction which allows removal of such software, do it and it will work! Because CodeWeavers is subject to the Digital Millennium Copyright Act they will be unable to support you.
Apply patch 1.2 or 1.4. (Other versions are untested)
Runs on my MBP 4.1 under Snow Leopard very smoothly with "Middle" to "High" Settings.
Additional information ONLY for 7.1.0: Don't use the option to install DirectX after the Anno Setup (may cause a crash), end installation and install DirectX from the DVD afterwards instead!
