When installing the VMware Infrastructure Client, everything is working correctly with CrossOver 8.0.0. However, when I run the application, I get an "Not implemented" error on the VMware logo (see screenshot #1), then when I initiate the connection, I get a "Communication error" (see screenshot #2).

I think that the issue here is with the ssl connection requirement. You might (if feasible in your environment) try disabling the ssl requirement on your ESX node and try again. Should be in the configuration tab, under software advanced settings, config, security, host.
This is only a guess 😊
Good luck, and I'm adding one of my votes for this utility (as I'm using it through an RPD session right now).
I don't have the option for disabling the SSL, so it's a no go for this... :(
Exactly the same issue is happening with CrossOver Pro 9.0.0 for Mac on Snow Leopard, with the same error as the screenshots.
