All of the posts I've found have told me to place mods in non-existant folders and since Spotlight is a piece of trash and can't search ANYTHING... anyone know where these files should go?

I just tried the game today, so I haven't gotten into mods yet. Which non-existent folders do you need? Have you tried creating them directly in the "torchlight" folder?
I've basically given up unless someone tells me where to put them. Not a huge deal, the newness of the game has worn off and it's really not all that fantastic without online play.
Well, you got me curious. I'll look for interesting mods to try out.
It looks like they have to go in the windows user's appData folder, so it would probably depend on the bottle you have.
In an XP bottle:
/home/{you}/.cxgames/{yourbottle}/drive_c/users/crossover/Application Data/runic games/torchlight/mods/{name-of-mod}
In a Vista bottle:
/home/{you}/.cxgames/{yourbottle}/drive_c/users/crossover/AppData/Roaming/runic games/torchlight/mods/{name-of-mod}
Keep in mind I'm just guessing. I'll try it as soon as time allows.
Mods are indeed working. The location of the mods/ folder in an XP bottle is exactly as mentioned in my previous post. (The basement mini-dungeon mod is kind of fun.)
It did take a bit longer for the game to load, so I suggest you add mods one at a time. And back up your bottle in any case. Some mods could break your character(s).
I have not tested on Vista bottles.
yeah i got some mods working, but i have found that you can realy only have one mod on at a time or they conflict and then the program rejects all of them, i downloaded this wowmatrix clone which does the job of swaping out mods and searching for conflics it downloads and stores them for you.

I saw TorchLeech while searching for interesting mods and where to install them, but didn't want to try another windows app, and didn't think it would be worthwhile. You make it sound like I should really check it out, though. I take it from your comment that it runs well under CXG then?
Ok i have tested torchleech and the program runs flawlessly so long as you have everything not in the same bottle as it minimized when you run it.
Requires no install, just download it and put it on your desktop.
make sure its run in the same bottle as the installed game.
to run the game with addons run in normal mode not safe mode.
only have 1 mod installed at a time unless they are compatable.

There is one particular mod in the works that i would place above all, and its not the nude patch.
There is a multi-player mod in the making and personally i am on the edge of my seat for that one , if it ever comes out that is.
