There's a new version of the game which has HD graphics, etc. Will there be a bottle for this too? I suspect that the only change may be some runtime versions, otherwise it'll just run through steam like the original.

I think the upcoming CrossOver 16 will have 64-bit support. Until then, it's not even theoretically possible to run it in CrossOver.
What about now with the 16.1 update?
There is a separate entry in the compatibility database for the special edition:

It needs 64-bit and d3d11 support, so it might a while. In any case, this thread can be closed and discussion resumed on the other entry.
