I've installed the game using a win2000 bottle. Installation was no problem, the game is in my app folder. But when I try to run it, I get an error message about removing a debugger before continuing. Suggestions?

What version of MOrrowind are you using? CD? Steam? I'm imagining CD. Am I right? Hmmm. I'm not sure what debugger it's talking about ...
Have you tried running a log? On the Crossover Games menu, go to programs, Run Program, select the bottle, browse to the exe, and click the checkbox to run a log. Run the program. It'll ask you what to name the log file and where to save it. Use notepad to look at the logfile. Anything unusual?
Have you looked at the Tips and Tricks tab (above, two places to the right of the Forum tab)?
I'm using a 2002 CD version of the game (not game of the year edition). I'm not sure I understand what you mean by running a log. In the Command bar do I select the location of where I installed the program?
I checked out the Tips & Tricks tab, but there's nothing up there describing my problem (I don't think).
I'm using OS 10.5.8 and the demo version of Crossover Games.

This is a problem for some games, but after some research, I think the problem actually might be that the DRM protection on the game is having trouble recognizing Crossover.
An old thread in the forum ("Won't Run" by Alex) describes this exact problem. He apparently got around it by making an ISO of the disk, and running from that.
But yeah, I agree that it sounds like a copy protection issue. I have to say, probably the easiest way around this issue is to buy an up-to-date copy of Morrowind (which you can still find on store shelves today), or get it through Steam. The copy protection schemes used in both have no trouble with Crossover.
