So everything seemed to be working fine till I got to the server select, and once Steam opened in TF2 I couldn't see any text (no fonts at all) within the GUI for Steam.
Any thoughts?

I'm using MAC OSX by the way.
Are you running 6.2? CrossOver versions less than 6.2 do not contain a fix that TF2 needs.
Also, you must install Steam from the Add programs menu. If you install it as an unsupported app, our workarounds will not be enabled in that bottle.
Also, our fix for the fonts is a bit fragile. If you change certain video settings, the game will reload some data. Our fix kicks in on the first load of the data but not on subsequent loads. So, you should have text when the game initially starts, but the text may vanish if you change certain video settings.
