OK, with the help of winehq, I was able to make Rocksmith 2014 run with Crossover:
Rocksmith 2014 will run fine, just as Steam installs and upgrades it, without any "no-cable patches", if:
1) Use winealsa.drv instead of pulseaudio (I edited the registry for that)
2) Use a relatively recent version of wine (newer than 2014/december).
3) Set
Win32UltraLowLatencyMode=0
in Rocksmith.ini in the program's directory.
This was tested with wine, in more than a version, and with Crossover 15.3.1.
I will upgrade asap to 16.0.0 and re-test.

Also, I don't know if this can be added to a CrossTie. When I find some time I'll try to learn about it..
