This is an older game that should run fine, but....
It installs with no issues, however when launched it will complain about Sound config, missing level files and will then exit, leaving the system running at 320x480 or so resolution ☹️.

Same here, it installs fine, however i get a "Cant create DirectPlay Lobby object" =/ sounds to me its looking for some DirectX files or somewhat, and it closes back into the original desktop
Try installing the DirectX runtime into the bottle. This installs the DirectPlay DLLs, and CrossOver uses them then.
If you are trying to play in Multiplayer and have connection problems, make sure that your hostname in /etc/hosts points to the IP of your external interface, not to 127.0.0.1
What version of DirectX? =/ I tried to download the latest DirectX files from M.S. but it wont let you download with out the "authentication" of Windows. Of course I have OSX 10.5 so it wont let me download unless there is a bypass, which I cant really seem to find.
I have gotten the game to run on my MacPro at home, after I installed Direct X 9.0 (not 9.0x) first, and using the latest version of Crossover Games.
