Ok, so after a lot of experimenting and searching, I got this to work for me. After installing to CrossOver from the discs, I still had the black screen hang-up at the intro. Here's what worked for me:

I installed the game in CrossOver on my Mac (still getting the hang up)

I installed the game on a Windows computer using the new installers found at sierrahelp.com (this allows for CD-less game play after install and is from the original company so is perfectly legal, especially since it only works if you have the original CDs). I then copied the Quest for Glory 5 folder inside of the SIERRA folder from the Windows computer onto a flash drive and replaced what was inside the SIERRA folder on my Mac. (Still get the hangup...keep going.)

I then found this from someone named Claudio at the wine website:
I used regedit and changed some Direct3D settings, and got forward.
These are the settings I changed (I also advertised only 1024 MB of VideoMemory as you see as the last key).
Be aware that these settings are NOT ok for most recent games. Use them for this game only.
Use regedit and set the following Direct3D key strings:
HKEY_CURRENT_USER\Software\Wine\Direct3D\
DirectDrawRenderer gdi
Multisampling disabled
OffscreenRenderingMode pbuffer
RenderTargetLockMode disabled
StrictDrawOrdering enabled
UseGLSL disabled
VideoMemorySize 1024
- To get to the regedit, use the Run Command in CrossOver and go to where it says above. When I tried it, there was no Direct3D folder inside of the Wine folder, so I just added it. Be sure to add the items above EXACTLY (I think capitalization counts). Then, double click it to add the value in (disabled, enabled...etc).
Example- after running regedit - when you get to the Wine folder, right click and choose New - Key - and name it Direct3D. Inside that folder, click New - String - Name it VideoMemorySize Then double click VideoMemorySize and add the value of 1024 in the box that pops up.
- Start the game and it should just fire up. I think the very first screen for me was black, but had audio, but after clicking through, the other intro movies showed. I then got to the loading screen and heard that glorious music and was able to start the game.
As of this writing, I haven't played very far into it, so I don't know if there are any other problems.
BUG NOTE - When you try to quit it freezes up on you. You have to use CMD, Opt, Esc to close out the program, but I can live with that.
I hope this helps anyone still searching for how to play this great game on a Mac. I seem to make a yearly "pilgrimage" from Spielberg to Silmaria and am looking forward to doing it again. Enjoy!
