Hello Augustus,
If you can thinking to migrate from Outlook 2003 to 2007 or 2010 you need to use Outlook backup software which can migrate Outlook from lower versions to newer versions of Outlook.
Download the software and migrate from Outlook 2003 to 2007 or 2010.
Be advised that we've never tested the above Outlook Backup Software in Crossover. Outlook plugins or third-party applications tend to be hit-or-miss (mainly miss) in Crossover, so use at your own risk.
The best thing to do is to simply set up your Outlook 2007 installation and connect to your Exchange server, which will initiate the process of pulling down all of your old messages, appointments, contacts, etc.
