I don't think there's any way to set this up, currently. Word is using the Windows Mail API (MAPI) to communicate with Outlook. This is an interactive process. In order for Mail to be involved, Mail would have to interoperate with MAPI, but it doesn't.
Your question gave me the idea that it is conceivable to develop a bridge between MAPI and Mail. However, that's not something we likely to pursue in the near term. I will add the idea to our bug tracker as a potential feature, though.
