The application throws an error (1628) when I try to install it. There seems not much to do.
I do not know whether this is caused by the "internal" installation of quicktime 7 or of iTunes 6 itself.

I am running Crossover Office 5.0.1, and I do not get the same error. Rather, the installer will run until it comes to the "iTunes is performing the requested operations." screen, at which point it waits with no progress for a long time, then spontaneously quits. However, I was able to install Quicktime 7 standalone successfully (it doesn't run real though...) so I know that it is the actual iTunes setup which is causing the problem, not the Quicktime sub-installation. I don't have a vote, but if I did it would go to iTunes 6. For both of these instalations I told Crossover that I wanted to install iTunes, then selected "Advanced Install" and gave it the Quicktime 7/iTunes 6 installer file.

I got this error back when I was using Crossover Office 5.0.0. Not having tested iTunes on 5.0.1 I retried the installation of the "all new" (😉) iTunes 6.0.2. The installers behaviour is exaclty the same you provided. It sits there a long time not doing (visually) anything, and than suddenly quits.
I tried to get some information on what went wrong from the log file. Yet until now, I haven't been able to do so.

I had the same problem as Matthew... cxo 5.0.1, exit during the same screen.
I'm running on a Debian sarge system that's using a 2.4.27 kernel. I noticed a bunch of ERROR's about not having TLS support in my glibc, so I wonder if a simple upgrade to kernel 2.6 might not help.
Nope, it didn't. :)
However, Crossover's running pretty snappily with 2.6.15. :o
My experiences in attempting to install iTunes 6.0 have been similar to those previously mentioned. I tell CX to install an unsupported application, point it to the installation file. All goes well until it reaches the screen which says:
iTunes Setup is performing the requested operations.
It sits at this screen until I hit ctrl-alt-backspace to restart my window manager.
I have exactly the same problem with SuSE 10.1
