I'm having an intermittent issue with the sound randomly becoming very loud (3x to 5x). I have to go into the Options and turn all of the sounds down to the first setting above no sound.
The game is playable though.

Lucky you. I cannot even get the game to start up. It appears to be installed but will not start.

I have no clue about your sound issue but for me Hitman 2 doesn´t really run fine. From third person view both 47 and all people he meets are "grey shadows" floating above the ground showing no animations. The rest looks fine though (movies, cutscenes).
I tested it with Crossover Games 7.1 under Ubuntu 8.10 (i386).
The issue seems to be related to Crossover Games since the character is fully visible with nice animations when I install and play under WINE 1.1.13
