Gamecrash before menu load.

I boot up the game in steam, and I can only hear some sounds form the game.
Don't see any of the videos of the beginning of the game.

And after a few seconds, it just crashes.

Should this be used in same bottle as steam with HL2 games?
Or would this require a bottle which bases itself on earlier/older windows?

Why do you use Steam to play the game?

In the game settings just turn the intro video off and then it should work.

How do I alter the game settings if I can not load the game? The Manager also crashes after a few seconds...

Same problem here.
This worked:
Open Crossover (Games?).
Configure » Manage Bottles
Find the bottle with GTA2 installed (I made a new one only for this)
Go to the tab "Advanced" and click "Open C: Drive in Finder"
Navigate to "Program Files » Rockstar Games » GTA2
Right click on "gta2 manager.exe" and open it with Crossover (Games?).
Go to the Video tab and remove the "Play Movie".
Click on "GTA2" at the bottom. :)

The colors went "gray-like" at me – the game will run fine.

I don't know how you can use other Mac-apps while you're playing. Cmd-Tab and spaces etc wont work. :(

Rather than finding the "gta2 manager.exe" in the Finder and opening it from there, it's better to use the Run Command dialog (from CrossOver's Programs menu). Opening from the Finder will only work if GTA2 is in your default bottle. With the Run Command dialog, you get to pick the bottle you run the program in.

Command-Tab and Spaces don't work because the game is in full-screen mode, and CrossOver "captures" the display for full-screen mode. This is necessary so that other Mac apps don't rearrange all of their windows, etc. if the game changes the display resolution. Mac OS X prevents the use of Command-Tab, Exposé, and Spaces when the display is captured.

You can try playing the game in a window. If the game refuses to run in a window, you can force it to by having CrossOver emulate a virtual desktop in a window. To do that, launch "winecfg" from the Control Panel tab of the Manage Bottles window. In winecfg, select the Graphics tab and enable emulation of a virtual desktop.
