Given your choice of options, I would definately try playing EVE in Crossover Games first. Here's my reasoning of why not the first three:
1) The EVE mac client is a wrapping for Transgamings Cider engine. While this probably does its job adequately, its based on a very old version of wine and it does not have support for the Premium client of the game, so if you want that, this one is not for your.
2) Im assuming your talking about WMware Fusion beta 2 here. The webpage says it features experimental DirectX 9 support without shaders. I enterpret this as a "your milage may vary" disclamation and since shaders is out of the question, I assume this also means the premium client is out the window. In addition, since you would effectively be emulation Windows in a virtual mashine, you would have to deal with a big performance hit, not to mention that you have to (buy if you dont own Windows already and) install Windows inside it first. In any case, since you dont have the luxury of testing every option, this one would be down on my priority list.
3) Crossover's main focus is not running games, but Crossover Games's is so this one pretty much answers itself, if you have the choice between the two, try using Crossover Games first.
