If I kept the graphics at minimum/lowest settings the game ran fine. Medium or higher graphics caused the game to crash.

I've been running it on 12.1.1 also. Works fine on max graphics as long as its in OpenGL mode. After installing it, open up Crossover, then in the top menu bar, go to Programs > Euro Truck Simulator 2 > Troubleshooting > Troubleshooting OpenGL. This runs the game using the Mac's native OpenGL rendering instead of DirectX and it works fine. No stuttering or anything on full gfx.
