I can run Dungeon Defenders on Crossover but once I get to a certain point in the game the fps just drops to a speed where nothing moves. Anyone know how to hopeful get around or fix this problem?

Smells like a crash rather than an FPS drop to me. Is it always the same point?
it is always around 15-30 minutes after starting to play the game. The game itself does not crash.
It is more of a slow movement than a complete stop
Can you watch memory use with a system monitor? Maybe there is a memory leak and your memory is full when the problem happens.
I recommend to run the game in a window so you can see the system monitor at the same time. You can also ssh into the computer if you have a second device and are familiar with remote access.
