Um... possibly a dumb question, but have you tried to increase the sensitivity? Go to the console (`) and type "sensitivity" -- this will tell you what it's at currently. Try raising it, you can go in small increments and see if it helps. For example.. 2.0 to 3.0 may be a big jump, you might try in .25 increments, and then adjust in .01 increments from there once you get in the right range.
I responded to a support ticket about this issue in the past. For that, I did some testing and determined that it was actually the mouse. Completely outside of CrossOver, I tried very fast movements of my mouse and found that it just lost tracking. The cursor would sometimes jerk a bit, or sometimes fly in random directions.
This may be a function of a bad mouse, or it may be due to the surface on which you're using the mouse.
For my testing, I switched to a different mouse and had nearly perfect mouse control in Counter-Strike.
