I've been able to install the GOG.com version on Snow Leopard in a Windows XP bottle without any problems. The opening movies and the character creation seems to be working fine.

Yup, the GOG version works great for me too, on Leopard and Snow Leopard, on discrete and integrated graphics. The only hitch is that the mods for widescreen resolution and widescreen UI don't work.
I installed CrossOver Games 10.2.0 yesterday with the GOG version of Baldur's Gate I & II (my optical drive is out of order so I can't use my discs) as well as EasyTutu_ToB.exe, EasyTutuDegreenifier-v4.exe and EasyTutuHotfixes-20110604. So far everything seems good. If I try to play in windowed mode I won't get window borders (decoration) so I play in fullscreen mode instead. There have been graphical "cursor cascade" glitches when I tried enabling higher resolutions but I'll give it another go.
A confusing part was that during the installation of the Degreenifier and Hotfixes mods I was prompted to select my "EasyTutu Folder" and I'm not sure whether that would be the drive_c/Temp/EasyTutuSetup or the drive_c/Program Files/Baldur's Gate directory. The installation process would freeze if I selected the latter so I went with the former. I'm not sure when it will show up in the game whether it worked or not though so... I dunnu if it really worked yet.
Well... Snow Leopard 10.6.8 on a MacBook Pro 2.4 GHz Intel Core 2 Duo with 2 GB 667 MHz DDR2 SDRAM and a GeForce 8600M GT. Up to 1024x768 works without a hitch on default settings with 3D acceleration and all that set to maximum - despite some forum posts suggesting that nVidia GeForce 8000 series and newer won't work properly. On the other hand I get a white screen that freezes if I disable the 3D acceleration et al.
Personally I've always had problems with resolutions greater than 1024x768 without using the widescreen (really, extended resolution) mod. I know nothing of the differences between the GOG version and the disk versions (I own the disk version myself), and in fact these posts on the GOG forums suggest it does work:

Also, on my own Core 2 Duo MacBook Pro (8600m, same as you) I would get all sorts of visual glitches if 3D acceleration was turned off and software rendering wasn't enabled, in both Windows and Mac OS X with Crossover. If 3D acceleration works then great, perhaps there's been a driver improvement.
