Also note that Adobe has released Acrobat Reader 7 natively for Linux, so there shouldn't be a reason anymore to run it under Wine. The real Acrobat (used not only to display pdf files but to generate them) is of course a completely different beast.
However under Linux generating pdfs is generally quite simple. KDE applications (and some others) offer the possibility to generate PDF-files from the print dialog directly. For other applications look for a way to "print to file". When asked for a filename choose something like myprint.ps. Then open a console window, go to the directory where you saved your file and say "ps2pdf myprint.ps". Voila: A new and shiny myprint.pdf should have been generated.
From Openoffice or Staroffice better use pdf export directly as this preserves links and alike.
