I have Photoshop CS running, using a hacked together combination of CX 3.0.1 and the itunes preview 3.1.0alpha version.
It looks like the deciding factor is the 'setFilePointerEx' function, which had not yet been implemented in the version of wine in 3.0.1, but is implemented in current versions.
So let's all cheer on the CodeWeavers team to get 3.1.0 ready!
I hope this is true. Otherwise I ruined a perfectly good pair of pants for nothing!

Could you detail your procedure of what you did? I assume this will work with CX 3.1.0 beta release? What problems did you encounter? What bugs did you notice?
Could you see if some of the issues stated for PS7 apply to CS?

It was a quick hack, which I didn't take time to either document or fully test.
I'll post again when I get a chance to do a bit of both.
