I don't think there is way to limit resource use within Crossover.
On the other hand, I would think OSX, being unix like, would have something like the "nice" command, or renice, which would reduce the software priority. Obviously, reducing the priority of a process won't exactly reduce the resources consumed, but it might help.
The thing is, limiting resources would be operating system thing, or a tool for the very purpose. Being a linux guy, I don't know much about such things on Mac, but googling has lead me to the following link, which might put you on the right track:
