I just took a look in the Mac manual, and oddly enough there's no mention of editing menu items.
But in case it can be useful for you, under Linux, Crossover allows for menu items to be modified via the bottle manager in the control panel. There is tool there the you can use to check and uncheck to menu items that you want. I can only imagine that if there is an option for the Mac version of Crossover, it would be in the same place.
I would hope that options available for Linux users will be available and in the same place for Mac users.
Go to (your home folder)/Applications/Crossover and delete, rename, or rearrange the folders and app icons listed there. That should be reflected in the Programs menu the next time you launch Crossover.
@Andrew: That was what I had already tried, and I found that, after doing it and attempting to create another Launcher with the same Windows application (once I had moved the Windows app where I wanted it) nothing appeared in the Program menu or the folder.
I re-attempted it, and it seems the key is choosing to Refresh Program Menu immediately after deleting the item from the folder. With that step, everything goes smoothly.
